The San Mauro estate is perfectly situated in the Sabine Hills near Rome. The olive trees grow on a south-facing slope of a 350 metre high hill. Here, the leccino and frantoio olives grow in perfect harmony with their natural environment.
The interaction of the soil composition, the manner of planting and the tending of the trees determine the high quality, delicate complex flavour and pleasant aroma of this superior olive oil. San Mauro BiCultivar is flowery with a slight pepperiness. The longer you have it on your tongue, the more the flavour intensifies. You first taste raw almonds, and later olives. With its refined and light flavour, this olive oil is suitable for white fish and spring chicken, among other things.
